Ingredients
- 5 overripe bananas, mashed
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- 1 cup pitted prunes, roughly diced
- 1 cup vegetable oil
- 1 cup brown sugar
- 2 eggs
- 2 1/2 cups gluten free self raising flour
Method
- Preheat oven to 160’C and line a 10cm x 20cm loaf tin.
- Place all ingredients in a mixing bowl and stir until combined.
- Bake for approximately 1.25 hours or until cooked through.
